At YAMANI, every knife is selected from the perspective of a professional sharpener. Our standards extend far beyond appearance, steel type, or brand reputation. We carefully evaluate each knife for its craftsmanship, blade geometry, heat treatment, sharpening characteristics, ease of maintenance, and its ability to be serviced properly for decades to come.


We believe a great knife should not only perform beautifully when it is new, but continue to improve through years of proper sharpening and care. For that reason, we select only knives that can be maintained, repaired, and restored without unnecessary difficulty while meeting the standards expected by professional users. We look for excellent craftsmanship, precise blade geometry, balanced design, and consistency in manufacturing—qualities that determine how a knife will perform not only today, but many years from now.



Unfortunately, experience has taught us that not every knife is built to the standard its appearance suggests. Some knives look perfectly respectable at first glance, yet reveal serious shortcomings once they are placed on the sharpening stone. Poor edge geometry, inconsistent grinding, excessive warping, or fundamental flaws in construction can make them extremely difficult to sharpen and maintain to a professional standard.


Over the years, many customers have brought us knives that required unexpectedly expensive repairs because these underlying problems only became apparent during sharpening. What should have been routine maintenance instead demanded extensive corrective work simply to restore the knife to a usable condition. These experiences have reinforced our belief that a knife should be judged not only by how it cuts when new, but by how well it can be maintained throughout its lifetime.


In recent years, we have also seen an increasing number of knives inspired by traditional Japanese designs being sold outside Japan as "Japanese knives." While some are thoughtfully made, others differ fundamentally from authentic Japanese construction. This is particularly evident in certain single-bevel style knives, where essential features such as the urasuki (the hollow-ground back) are absent, or where the blade is actually ground as a double-bevel knife despite its appearance. Without substantial reworking, these knives cannot be sharpened or maintained using the traditional techniques intended for a genuine Japanese single-bevel knife.


As Japanese professionals, we believe we have a responsibility to preserve and represent the traditions of Japanese knife making accurately and honestly. We do not choose products simply because they follow current market trends or imitate traditional designs. Every knife in our collection has earned its place because it reflects genuine Japanese craftsmanship and the maker's commitment to creating a tool that can serve its owner faithfully for decades.



Our knives are not always the least expensive option, nor do we aim to be. We believe that true value is measured over the entire life of a knife—not at the moment of purchase. A well-made knife can be sharpened, repaired, and restored for generations, often retaining greater long-term value while avoiding unnecessary replacement or costly corrective work. In our view, buying well once is almost always better than buying cheaply many times.


This philosophy is at the heart of everything we do. We are not simply a retailer of Japanese knives. We are professional sharpeners who understand what happens to a knife after years of real use, and we choose every knife with its entire lifespan in mind.
