Shotaro Nomura (1939 - Present)

The Master Sharpener Who Defines a Knife's True Performance.

 

 

Among the craftsmen of Sakai, where Japanese kitchen knives have been produced for centuries, few names command as much respect as Shotaro Nomura. Recognized as a Traditional Craftsman (Dentō Kōgeishi), Nomura has devoted more than six decades to the art of blade sharpening (Hamaguri-ba and final edge geometry)—the stage that ultimately determines how a knife performs in the hands of a chef.

 

 

In recognition of his lifelong contribution to Japanese traditional craftsmanship, Nomura was awarded the Order of the Sacred Treasure, Silver Rays (Zuihō Tankō-shō) by the Government of Japan in 2009.

As the oldest active artisan in Sakai, he represents one of the last living links to a craft that has been passed down through generations.

After beginning his apprenticeship under the renowned sharpener Mr. Ino, Nomura was taught a philosophy that has guided his entire career: "Even if you make only one knife, make it the very best you can." Rather than pursuing quantity, he dedicated himself to producing blades of uncompromising quality, believing that true craftsmanship lies in precision, consistency, and attention to every detail.

 

 

Unlike forging, which creates the blade itself, sharpening gives the knife its character. The geometry of the edge, the balance of the convex grind, and the countless subtle adjustments made by the sharpener determine how effortlessly a knife moves through food, how long it retains its edge, and how naturally it feels in use. It is this final stage that transforms a forged blade into a true culinary instrument.

 

Throughout his career, Nomura has become known for refusing shortcuts. Where others may complete a blade in only a few grinding stages, he often performs additional finishing processes to achieve a level of refinement that reveals itself not only in appearance, but more importantly through years of use. Professional chefs frequently describe his work as possessing exceptional smoothness, control, and edge stability—qualities that can only be achieved through decades of experience.

 

 

Many of Sakai's finest forged blades have passed through Shotaro Nomura's hands. His sharpening has been paired with the work of some of Japan's most respected blacksmiths, creating knives that are admired by professional chefs and collectors around the world. While the smith gives life to the steel, it is the sharpener who unlocks its full potential. 

He has been my personal mentor in Japanese knife sharpening. Over the years, he has generously shared with me a wealth of knowledge — not only sharpening techniques, but also the history and traditions of Sakai knives, practical wisdom, and countless insights gained through a lifetime of craftsmanship. To this day, he remains my greatest mentor in the world of Sakai knives and one of the craftsmen I respect most deeply.
