Every whetstone begins to wear from the very moment you start using it and becomes uneven through use. Even a small amount of dishing or surface distortion can affect the angle, geometry, and consistency of sharpening. For this reason, maintaining a flat and accurate stone surface is one of the fundamental requirements of proper sharpening.

At YAMANI, we consider a reliable flattening tool to be essential equipment—not an optional accessory. One of the marks of a skilled sharpener is knowing how to properly maintain and control the surface of the whetstone.

If you are purchasing your first whetstone or beginning to learn sharpening, we strongly recommend purchasing a proper flattening tool at the same time. Without the ability to maintain the surface of your whetstone, it is impossible to maintain consistently accurate sharpening over time.

 

Why Flattening Matters

During sharpening, the whetstone itself is continuously wearing.

The center and frequently used areas naturally wear faster, gradually creating hollows and irregularities in the surface. Continuing to sharpen on an uneven stone can make it increasingly difficult to control the blade accurately and can affect both the sharpening angle and the intended geometry of the knife.

This becomes even more important when working on Japanese single-bevel knives, thinning, geometry correction, or other precision sharpening where the condition of the stone directly influences the finished surface.

Why YAMANI Chooses Electroplated Diamond

There are generally two approaches to flattening whetstones: conventional abrasive flattening stones and metal flattening plates using diamond abrasives.

At YAMANI, our choice is clear.

We use and recommend electroplated diamond flattening plates.

Traditional abrasive flattening stones wear as they are used. As the flattening stone itself loses its original flatness, its accuracy must also be maintained. In other words, a tool intended to correct the whetstone can itself gradually become inaccurate.

For this reason, YAMANI does not use conventional stone-type flattening tools for our sharpening work, nor do we intend to offer them as our recommended flattening solution.

Instead, we select electroplated diamond flattening plates, which provide excellent rigidity, dimensional stability, efficient cutting performance, and reliable surface accuracy.

 

Accuracy Is Worth Investing In

A high-quality electroplated diamond flattening plate costs considerably more than a conventional flattening stone. However, considering its accuracy, rigidity, efficiency, and long service life, we do not consider it expensive.

Electroplated diamond plates will naturally experience wear over time, but a properly made, high-quality plate can provide reliable performance for a long period while maintaining the precision required for serious sharpening work.

A flattening tool is also not something separate from sharpening.

It is part of the sharpening system itself.

Investing in quality whetstones while neglecting the accuracy of the surface used for sharpening defeats much of the purpose of choosing good stones in the first place.

Do not purchase a whetstone without also having a reliable method of flattening it.

  • Flattening is essential to accurate sharpening. Whetstones naturally wear during use, so maintaining a flat surface is a fundamental part of a proper sharpening system—not an optional extra.
  • Uneven stones create sharpening problems. As a stone becomes dished or distorted, it becomes harder to maintain a consistent sharpening angle and can alter the intended geometry of the knife. This is especially important for precision work such as Japanese single-bevel knives and thinning.

A Note on Japanese Sword Polishing

 

 

The importance of maintaining a flat whetstone described above applies primarily to the sharpening of Japanese kitchen knives, woodworking tools, and other edged tools.

Traditional Japanese sword polishing is different.

In sword polishing, a perfectly flat stone is not required at every stage. Depending on the polishing process, the stone may be intentionally shaped to suit the curvature and geometry of the blade. In certain stages, for example, a stone with a rounded or convex surface may be used deliberately rather than a completely flat one.

Therefore, the principle that "a whetstone must always be perfectly flat" should not be applied universally to traditional Japanese sword polishing.

The shape and preparation of a polishing stone must always be appropriate for the blade, the purpose, and the particular stage of the work.
