What is a Rice and Palatability Appraiser?
Often described as the equivalent of a sommelier for Japanese rice, a Rice and Palatability Appraiser is a certified specialist trained to evaluate the quality, flavor, and eating characteristics of rice through both technical knowledge and sensory analysis.
The qualification is awarded by the Rice & Taste Appraisers Association of Japan.

To earn the certification, candidates must complete an accredited training program covering rice cultivation, grading, milling, storage, cooking science, and sensory evaluation.
