Soy sauce may be one of the simplest ingredients in Japanese cooking — yet the right soy sauce can transform the way a dish tastes.
Brewed on Shodoshima Island, one of Japan's historic centers of soy sauce production, this traditional soy sauce comes from a culture of brewing that has been cultivated on the island for more than 400 years.
Rather than being made simply for speed and efficiency, it is naturally fermented and slowly matured in traditional wooden kioke barrels, allowing time, microorganisms, and the changing seasons to develop its character.
The result is a soy sauce with deep umami, a rounded aroma, and a rich, balanced flavor — one designed not to overpower good ingredients, but to bring out more of what is already there.
Made simply from Japanese-grown soybeans, Japanese-grown wheat, and salt, with no artificial additives or preservatives.
Use it with sushi and sashimi, tofu, grilled fish, vegetables, marinades, or freshly cooked Japanese rice. When you have taken the time to choose good ingredients, the seasoning that touches them should deserve the same consideration.
